Pâté is a mixture of cooked ground meat and fat minced into a spreadable paste. In this recipe we will use the Pâté concept in vegetables. 1. Place the grated carrots in a saucepan, together with the ground coriander, orange juice and water. Cover and simmer for 40 minutes until the carrots are cooked. cool and transfer to a food processor or blender with a little of cooking liquid.
2. Add the soft cheese and coriander leaves and process until smooth. Season to taste with salt and pepper and blend again. Spoon into spoon dishes and chill before serving with rustic bread.
