A scone is a single-serving cake or quick bread. They are usually made of wheat, barley or oatmeal, with baking powder as a leavening agent, and are baked on sheet pans. Step by Step method

Directions:

1. Sift the flour, mustard, cayenne, and salt into a bowl and rub in the fat until the mixture resembles breadcrumbs. Stir in three - quarters of cheese, egg, and enough milk to mix to a soft dough.

2. Turn on to a floured surface, knead lightly and roll out to 2 cm thick. Cut into 5 cm rounds and place on a floured baking sheet. Brush with milk and sprinkle the remaining cheese.

3. Bake in a preheated oven, 200 C for 15 minutes. Transfer to a wire rack to cool. Serve with butter, if desired.
