Step by Step method

  1. In a pot over medium heat, saute onion with olive oil until lightly browned.
  2. Add freekeh and stir with onion for a minute or two (roasting freekeh before cooking gives a richer flavor).
  3. Add vegetable broth and water .
  4. Cover the pot and and simmer over low-medium heat for about an hour or until freekeh is very tender.
  5. Add cumin and salt to taste.  
  6. Serve hot.

Tips & variations

  • you can add chicken or meat to enrich this soup

  • you can replace the vegetable broth with chicken or meat broth
