Step by Step method

  1. In a pot, Saute onion with butter (or oil) for 2-3 minutes.
  2. Add spinach. Saute over medium heat until the water in spinach evaporates.
  3. Add flour and saute for a couple of minutes.
  4. Add water/chicken stock and salt. bring to a boil.
  5. Simmer for about 10-15 minutes over low-medium heat.
  6. Optional : blend it with a blender for a smoother soup. or you can serve it with spanich peices.
  7. Leave Spinach Soup to cool for 10-15 minutes.
  8. Whisk the yogurt with egg and stir in slowly. 
  9. Enjoy!

Tips & variations

  • If you stir in the egg and yogurt mixture to hot soup, the texture of yogurt will spoil and this will affect the soup.
