There are many versions of potato kibbeh; some are strictly vegan, others contain a layer of meat, some are made into balls and stuffed with onions and nuts, etc. This one is made up of mashed potato mixed with bulgur, onion, cumin, olive oil, and many other ingredients that will make this dish so distinguished.
1. Combine onion, bulgur, cumin and mint in a blender. Mix the ingredients for 30 seconds until the onions become fully minced.
2. In a bowl, mash boiled potatoes with water. - Work the potatoes well, and then add the onions and bulgur mixture. Stir all the ingredients very well together.
3. Pour olive oil to the mixture, season it with salt. Keep stirring.
4. Transfer the kibbeh into a serving dish, sprinkle some olive oil on top, and serve with pita bread.
