Middle Eastern cuisine includes lots of grains including wheat berries. Their hearty, chewy texture adds body to otherwise light dishes while also delivering great whole wheat nutrition. Check out this interesting Middle Eastern salad recipe that is filling enough for a great lunch or light dinner.
1. Add the wheat berries and water to a pot, bring to a boil, cover, reduce the heat to low and simmer for approximately an hour. Check for doneness and continue cooking a bit longer if needed.
2. Make the the dressing by whisking together the shallot, olive oil, tahini, lemon juice, salt and pepper.
3. Drain the wheat berries and toss with the dressing. Stir in the spinach which will wilt slightly from the heat of the wheat berries.
