Spanakorizo: is a Greek vegetarian dish of spinach and rice. It is described as a typical Greek country dish that may be eaten warm or cold. In this typical side dish we will keep all the ingredients except for the rice, where we will replace it with nutritious quinoa seeds.

Step by Step method

Directions:

1- In a sauté pan over medium heat, heat olive oil and sauté onion until translucent (approximately 5 minutes). Add baby spinach and sauté until wilted (about another 2 minutes).

2) Remove pan from heat, add and combine cooked quinoa, lemon juice, zest and crumbled feta and flat leaf parsley. (Season to taste with salt).


Tips & variations

  • To cook quinoa, boil 1 ½ cup of water and add one cup of quinoa, cook covered on a low simmer for approximately 15 minutes.
