Step by Step method


1. Peel the orange and separate the sections. Remove any course membranes, then cut each section in half and place in a small bowl. Toss with a teaspoon or so of dressing, just enough to coat them lightly.

2. Place the spinach and scallions in a large salad bowl. Just before serving, toss with approximately 1/4 cup dressing, just enough to coat the leaves.

3. Put the spinach in a serving plate, sprinkle with oranges, feta cheese, and olives (optional). Serve immediately.


Tips & variations

  • Vinaigrette: salad dressing of oil, wine vinegar, and seasoning.

  • If you don't have kalamata olives, or don't like them, then just leave them out. Do not substitute with regular black olives (the flavor will not go well).
