Step by Step method

Directions:

1. Heat the oil in a pan. Add the spring onion and garlic fry over a medium heat, stirring constantly until soft.

2. Add the remaining ingredients and cook for 5 minutes.

Another way to do it:

1. If you like, this soup can be puréed. Set aside one- quarter of the banana and chili slices, then process the rest, together with the spoon, in a food processor or blender until smooth. Return the mixture to the pan, add the reserved banana and chili slices and warm through for 3 minutes.

2. Serve hot, garnished with coriander leaves, lime quarters and spring onion strips.
