1. Preheat the oven to 175 c.
2. Peel and halve the vegetables crosswise.
3. Lay them flat on the baking pan and lightly coat them with olive oil.
4. Apply salt and pepper.
5. Bake the vegetables for about 45 minutes or until crisp, and serve.
